Kale is one of the healthiest foods on the planet.
Its so versatile and I love it so much, I could eat it at every meal including breakfast.
And I do.
This recipe is for a smoothie you can have any time of day but I like it for breakfast. Its filling and keeps me going for a long time. Yes, I can drink the entire 6 cups in one sitting. You are not obligated to do so. Feel free to share.
Kale Blueberry Vanilla Non-Dairy Smoothie (vegan, gluten-free, nut free, dairy free, can be soy free)
Makes 6 cups
2 cups packed, chopped raw kale (baby kale won’t be as strongly flavored or as tough as large kale leaves)
2 cups blueberries
1 Cup non-dairy milk of choice (I use unsweetened because that’s my taste preference – you can use a sweetened version. You can also use vanilla flavored and leave out the vanilla below)
2-4 TBSP vanilla extract (you can leave this out if you use a vanilla flavored milk)
1 cup water
Optional: sweetener of choice – use according to your own taste buds (or you could use 1 ripe banana)
Put it all in the blender until completely pulverized/liquified. I have an inexpensive blender (not a high powered Vitamix type) so it takes a little longer to get rid of all the little chunks. I don’t add all the liquid until the blueberries and kale are completely liquified.
